How the oven table works
Fahrenheit is (C × 9/5) + 32. Celsius is (F − 32) × 5/9. Cook EZ rounds oven readings to the nearest 5 degrees so they match common dials.
British gas mark is approximated as mark = (C − 121) / 14, clamped from 1 to 9. Below about 135 °C the table reports mark 1. The inverse is C = 121 + mark × 14.
Fan ovens often run cooler than the set point. Check the food, not only the dial.
Gas marks are a British oven convention. Your range may differ by 10 °C. Always confirm doneness with a thermometer for meat.
