Keep the two formulas in order

Doubling every ingredient doubles the total to 3,600 calories. If the larger batch makes 12 equal servings, 3,600 divided by 12 returns 300 calories per serving. Both the numerator and the yield doubled.

Now serve that doubled batch as eight equal portions. The calculation becomes 3,600 divided by 8, which equals 450 calories per serving. The ingredients did not change again. The stated yield did.

Pan size, evaporation, and the way food is portioned can prevent a doubled recipe from producing exactly twice the practical yield. Count the portions you actually make or weigh the finished batch before assigning a per-serving value.

Use batch weight for an uneven serving

Continue with the 3,600-calorie doubled recipe. After cooking, the edible batch weighs 2,400 grams. A plate that weighs 500 grams is 500 divided by 2,400 of the batch.

Multiply 3,600 by 500 divided by 2,400. The plate contains 750 calories. The remaining 1,900 grams contain 2,850 calories, so the two amounts return to the 3,600-calorie batch total.

This weight method assumes calories are distributed reasonably evenly. It works well for a stirred soup, chili, curry, or casserole. It is weaker when one plate receives most of the cheese, skin, meat, or oil.

For visibly uneven components, portion them separately. Weigh the pasta and sauce together only if they are mixed through the batch. Count a piece with extra topping from the ingredient amounts on that piece when a proportional estimate would hide the difference.

Scale the recipe record with the food

Keep Mifflin-St Jeor outside the recipe math

The 1990 study identified by PMID 2305711 derived the Mifflin-St Jeor equation to predict resting energy expenditure in healthy adults. It uses body weight, height, age, and the sex categories used in the study. Resting energy expenditure is an estimate of energy used at rest.
