Gluten-free recipe generator: wheat in the obvious places and in the sauce

Gluten is a protein in wheat, barley, rye, and their hybrids. A gluten-free generate must keep those grains out of the written list and still fail if you pour a wheat soy sauce the model named as "soy sauce." Cook EZ can block wheat as an allergy or as a diet tag. This guide is the kitchen map: thickeners, grains that are safe, the bottles that are not, cross-contact on a shared board, and Cook Mode steps that do not assume a flour dredge.

Wheat, barley, rye, malt, and cousins

Wheat includes spelt, farro, durum, semolina, couscous, most soy sauces, many gravies, and flour tortillas. Barley shows up in malt vinegar, malted milk, some beers, and some soups. Rye is bread and some crackers. Malt is often barley. Triticale is a wheat-rye hybrid. A generate that says "use soy sauce" has not finished the job for a celiac diner. The bottle must say gluten-free, or you use a labeled tamari, or you skip the dish.

Oats are frequently contaminated with wheat in mills. Certified gluten-free oats are a different grocery item. If the card says oats, the package in your kitchen has to be the certified one. The model cannot see your canister.

The FDA allows a "gluten-free" claim on labeled foods that meet the federal rule (less than 20 ppm gluten). That claim on a package is stronger than an AI ingredient list. Barcode the product. Open Food Facts may show the claim. The package is current. USDA FoodData Central generics will not tell you if a restaurant gravy had flour.

Soy sauce packets in takeout drawers are wheat more often than not. Throw them away if you keep a GF kitchen, or quarantine them. A generate that says "use the packet in the drawer" is a trap. The labeled bottle in the door is the staple.

AI can miss wheat in sauces. Verify labels.

This is the line we repeat because it is the ER visit. Hoisin, oyster sauce, soy sauce, teriyaki, many "stir-fry sauces," imitation crab, seitan (which is wheat), soy-based meat that uses wheat gluten, malt vinegar, soy-based marinades, some spice mixes, some stock cartons, some mustard. The allergen gate matches names the model wrote. "2 tbsp soy sauce" may pass a wheat block if the model did not write "wheat." You still choose the bottle.

If wheat is in Taste Profile as an allergy, treat every brown sauce as guilty until the label is innocent. Generate "gluten-free tamari only, no soy sauce, no hoisin unless labeled GF." If the preview still lists soy sauce, edit or reroll. Do not cook on hope.

Shared toasters, shared fryers, shared pasta water, a wooden board used for bread, a colander that boiled wheat pasta: those are cross-contact. A home generate assumes a clean pan if you give it one. Celiac management is a kitchen protocol, not a caption. Cook EZ is not a certified GF kitchen.

Flour dust on a shared counter is cross-contact. Wipe with a wet cloth before GF pasta hits the board. This is boring. It is also the job. The model will not write "wipe the counter" unless you put it in the note. Put it in the note if you share a kitchen with bakers.

Thicken, dredge, and bake without wheat

Thicken: reduce, cornstarch or potato starch slurry (if you use those), arrowroot, a puree of the soup's own beans or potato, xanthan if you already know it. A generate that says "make a roux with flour" on a gluten-free profile failed. Edit to a reduction or a labeled starch.

Dredge: rice flour, cornstarch, gluten-free 1:1 blends, crushed gluten-free crackers. Maillard still wants dry food and hot fat. The blend may brown faster (sugar in some 1:1 bags). Watch the pan. Carryover cooking on a cutlet still applies. Poultry to 165 °F.

Pasta: labeled gluten-free pasta, rice noodles, 100 percent buckwheat soba (many soba blends contain wheat). Read the soba package every time. Cook GF pasta in plenty of water and eat it soon. It goes from fine to mush. The card should say so. If it treats GF pasta like durum, you will be unhappy.

Cornstarch slurries lump if you dump powder into a boiling pot. Mix with cold water first. A generate that skips that line will give you dumplings in the gravy. Edit the step.

Starches and grains that belong

Rice, potatoes, corn (polenta, tortillas that are 100 percent corn), quinoa, buckwheat, millet, certified GF oats, cassava, gluten-free breads. Corn tortillas can be made on shared lines. If you are celiac, pick a brand that claims gluten-free. The Dietary Guidelines grain group includes gluten-free grains. You are not required to eat a "paleo" plate unless you want one.

Soy sauce replacements: labeled GF tamari, coconut aminos (sweeter, different carb). Coconut aminos will change a keto constraint. State both constraints if you have both.

Beer: most beer is barley. GF beer exists. A generate that says "deglaze with beer" needs a labeled bottle. Wine and distilled spirits are a separate celiac debate (distillation). If you have a rule, put it in the note. Do not assume the model knows your clinician's advice.

Licorice, some teas, and malted milk balls are barley stories people forget. The dinner generate is not the only gluten in the day. The diary will log a malted milk as carbohydrate. The celiac diner cares about the malt.

Generating in Cook EZ

Set wheat allergy and/or gluten-free diet. Repeat in the note: "no soy sauce unless labeled gluten-free, no malt vinegar, rice noodles OK." Photo of a restaurant pasta: the home generate should switch to GF pasta and a sauce you control. It will not make the restaurant safe. Do not eat the restaurant plate because the home card looks similar.

Cook Mode: timers still work. The important edit is the sauce line and the pasta line. Scale servings. Leftovers: FSIS 3 to 4 days, 165 °F reheat, 2-hour chill. GF pasta leftovers are often worse than durum leftovers. Plan to eat pasta night-of, soup and rice the next day.

Log: barcode GF breads and sauces (free). FDC for rice, chicken, vegetables. The diary will not warn you about gluten. The allergen banner on the recipe might. The bottle will.

If you use Open Food Facts via barcode, still read "wheat" on the physical pack when the brand is new. Crowdsourced tags miss reformulations. The FDA gluten-free claim on the box is the stronger signal when it is present.

Nutrition when you swap the starch

Gluten-free 1:1 flour blends are not nutritionally identical to wheat flour. They may have less protein and more starch. FoodData Central rows differ. If you track protein, a wheat pasta dinner and a rice noodle dinner are different. Use the macro calculator as a planning tool, then log the actual noodle.

Many GF packaged snacks are dessert. The FDA added-sugars line tells you. Gluten-free is not a calorie strategy. TDEE from Mifflin-St Jeor still applies.

Fiber can drop if you left whole wheat and did not add beans, fruit, or vegetables. Generate a vegetable that is not garnish. Lentils are gluten-free. They help the Dietary Guidelines pattern and the protein number.

When the card is wrong, stop

If seitan appears, stop. If soy sauce appears without a GF specifier, stop or swap the bottle before heat. If couscous appears, stop. If barley mushroom soup appears, stop. Regenerating is cheaper than getting sick. Credits exist for this.

If you are cooking for celiac guests, you need labeled ingredients, clean pans, and no shared oil. A "mostly gluten-free" skillet with a flour-dusted cutlet at one end is not a GF dinner. Cook the GF food first, or use two pans.

Restaurant recreation from a photo is a home recipe. It is not a celiac-safe copy of the restaurant. Shared fryers are invisible in the photo. Cook at home from labeled food.

A shared toaster is a crumb factory. Dedicated GF bread gets a toaster bag or a clean skillet. The generate will not mention the toaster. Your kitchen protocol has to. Celiac management is a set of pans and a label habit, plus the card.

Open the tamari. Read wheat, barley, rye, malt. If the bottle is clean, set the skillet to shimmer and cook the rice noodles in a second pot. Generate the card with "GF tamari only." Keep the wheat pasta colander off this sink tonight.

Is the wheat allergy chip enough?

It blocks wheat in names the model writes. Hidden wheat in soy sauce, hoisin, and malt vinegar is still your label check. Specify gluten-free tamari in the prompt.

Are oats gluten-free?

Only if the package is certified gluten-free (contamination). Regular oats are a risk for celiac diners.

Can I generate gluten-free and vegan together?

Yes. Avoid seitan. Use rice, corn, potatoes, legumes, tofu. Check every sauce.

What temperature for leftovers?

Reheat to 165 °F. Refrigerate within 2 hours. Use within 3 to 4 days per FSIS. Gluten-free status does not change that clock.
