Vegan recipe generator: legumes, tofu, and labels that still need a human

A vegan generate is a constraint file: no meat, poultry, fish, dairy, eggs, honey if you include it in your rule. Cook EZ reads diet from Taste Profile and should refuse butter, ghee, fish sauce, and egg noodles. This guide is how to cook those cards well (Maillard on tofu, dal that is not beige water), how to check labels the model will miss, and how to log protein without a chicken default.
What vegan means in the generator
Diet chip vegan should strip animal products from the ingredient list the model writes. It will not strip them from a bottle the model named generically. "Worcestershire" often contains anchovy. "Pesto" often contains cheese. "Noodles" may be egg. "Chocolate" may contain milk. "Bread" may contain dairy or honey. The generate is a draft. The FDA ingredients list on the package is the authority. Open Food Facts allergen and ingredient tags help when you barcode. They can lag a reformulation. Read the package you opened.
Honey is a split among vegans. If your Taste Profile or note says no honey, the card should not glaze carrots with it. Maple and sugar are different debates. State your rule in the note so the model does not improvise.
Cross-contact in a shared fryer is a restaurant issue. A home generate assumes your pan. If you share a kitchen with meat, use a clean skillet for the tofu night. The generator cannot see the bacon fat you cooked in at noon unless you tell it "clean pan, no animal fat residue" and you follow through.
Nutritional yeast is a flavor staple, not a complete protein strategy by itself. It is also a trigger for some people. If you hate it, say "no nooch" in the note so the generator stops putting it on every bowl.
Protein without animal products
FoodData Central cooked lentils, canned beans (drained), tofu, tempeh, seitan (wheat), peanut butter, and soy milk are the usual rows. A dinner with 25 to 40 g of protein is tofu plus beans, or a large dal plus a soy yogurt, or seitan if wheat is safe. A dinner of pasta with tomato and no legumes can be low. Seitan is wheat gluten. It is not a gluten-free vegan option. If you need both vegan and gluten-free, you want tofu, tempeh (check soy), legumes, and labeled gluten-free grains. Generate both constraints. Do not assume "vegan" covers celiac.
The Dietary Guidelines include soy products, beans, peas, and lentils in protein foods. A vegan week can match that pattern. It can also be fries and soda. The generator should include a vegetable that is not a lime wedge if you ask for a complete dinner.
A wok of vegetables with no tofu, tempeh, or legumes is a side. Put the protein on the board during mise en place. FoodData Central cooked tofu and lentil rows will show you whether the serving is a garnish or a dinner.
Fond, Maillard, and fat you can name
Tofu: extra-firm, pressed, dry, hot pan, oil, do not touch until a crust forms. Air fryer: 390 °F, 12 minutes, shake. Tempeh: slice thin, sear, then simmer in a sauce so bitterness fades. Mushrooms: high heat, salt late if you want them to brown rather than weep. Onions: past translucent into brown for the fond that meat usually provides.
Umami without fish sauce: tomato paste browned in oil, mushrooms, soy or tamari, miso, MSG if you use it, roasted nori. If soy is an allergen, tomato, mushroom, and salt have to work harder. Generate "no soy" explicitly. Many "vegan oyster" sauces are still soy-based.
Carryover cooking is mostly irrelevant for tofu. It is relevant for a whole roasted cauliflower. Rest it so the stem finishes. Leftover dal: FSIS 3 to 4 days, reheat to 165 °F, chill within 2 hours. Coconut milk soups separate in the fridge. Whisk as they heat.
Vegetable stock cartons sometimes use milk derivatives or honey in "natural flavors" debates. Read the ingredients. Barcode. The vegan chip on Taste Profile cannot see the carton until you do.
How to generate in Cook EZ
Diet vegan on. Allergies on. Time and equipment on. Note: "complete dinner, 35 g protein, no honey, no store trip." Photo path: a restaurant vegan bowl you want to recreate at home, or a fridge of vegetables and tofu. Confirm identification. A photo of butter chicken should not generate butter chicken on a vegan profile. If it tries, the gate failed. Do not cook it. Report it. Regenerate from a tofu photo or a text prompt.
Cook Mode: tofu sear timer, rice cooker parallel, sauce off heat if it has sugar. Scale for meal prep. Dal and chili freeze. Fried tofu does not freeze as well (texture). Prep the sauce and the grain, cook tofu night-of.
Log from the card. Barcode tofu and plant milks (free). FDC for lentils. Add oil you actually used. A vegan diary that skips oil is fiction.
Weeknight templates
Dal and rice. Tofu stir-fry with leftover grain. Chickpea tomato stew. Black bean tacos with cabbage. Ramen with miso, greens, and tofu if the noodles are egg-free. Pasta with white beans and roasted broccoli. Check the pasta for egg. Check the ramen for fish and wheat.
Air-fryer tofu plus a bag salad is legal. Dressing: oil, vinegar, salt, mustard (check honey). The 30-minute dinner guide applies. Vegan does not require more time. It requires a different protein sitting on the board during mise en place.
If the table is mixed vegan and omnivore, generate a vegan base and let others add cheese or chicken at the table. Do not cook bacon in the vegan pan first.
B12, iodine, and the diary
Vitamin B12 is the nutrient vegan diets must plan. Fortified foods or a supplement are the usual advice from dietetics bodies. Cook EZ is not going to diagnose a deficiency. Iodine, calcium, iron, and omega-3 (ALA from flax, walnuts, canola) are the other talking points. Iodized salt, calcium-set tofu, and legumes help. The FDA label on plant milk tells you if it is fortified. Barcode it.
TDEE from Mifflin-St Jeor does not care if the calories are vegan. Energy still has to roughly match. Oil and nuts are dense. Rice is easy to overeat. Use the calorie calculator as a budget, then cook.
Iodized salt is a quiet staple on a vegan week if you do not eat seaweed or fortified milk. The FDA panel on plant milk tells you about calcium and vitamin D. Barcode the carton when you open a new brand so the diary matches the fortification you actually bought.
Press the tofu while the onions take color in the other pan. Generate with vegan on and "35 g protein, 30 minutes." When the tofu releases from the metal, it is ready to flip. Sauce off heat. Read the tamari label before it hits the pan.

The vegan diet chip blocks them in the written ingredient list. Hidden anchovy in Worcestershire and milk in chocolate are still label checks. Confirm the preview before you cook.
Can I be vegan and gluten-free in one generate?
