What to cook tonight: a decision tree for 6:30 p.m.

Tonight is a constraint problem. Minutes, dirty dishes already in the sink, protein that is thawed or not, and a human who does not want a project. Cook EZ can take a fridge photo or a sentence and write a card. This guide is the decision tree you run before you spend a credit, plus the cook technique that makes a 25-minute dinner taste like you meant it.
Three questions, in order
Is there leftover food that is still inside the FSIS window (cooked 3 to 4 days ago, chilled within 2 hours, not forgotten on the counter)? If yes, tonight is a reheat to 165 °F plus a fresh element. Generate only if you need a method (fried rice, soup, tacos). If the leftover is mystery meat with no date, tonight is eggs or a can, not a dare. USDA Keep Food Safe does not care that you paid for the takeout.
How many minutes until you need to eat? Be grim. 20, 30, or 45. Put that number in Taste Profile and in the prompt. A 90-minute braise is a different night. Thawed protein versus frozen is the next filter. Frozen thick poultry is not a 20-minute dinner.
How many burners and how many pans can you stand to wash? One-pot and sheet-pan exist. Wok plus rice cooker is two vessels and often worth it. A generate that uses four bowls of mise en place on a Tuesday is a weekend card. Delete bowls in the edit.
If the answer to all three questions is bad (no safe leftovers, 15 minutes, one dirty pan you refuse to wash), eggs in that pan after a rinse is still dinner. A generate that needs a clean Dutch oven is a different night. Put the constraint in the prompt: "dirty kitchen, one rinsed skillet, eggs and whatever vegetable has not collapsed."
Default dinners that always work
Eggs and toast and a vegetable. Fried rice from leftover grain. Pasta with garlic, oil, and frozen spinach (check the pasta and the sauce for wheat and egg). Tofu from the freezer, pressed in a towel while the pan heats, then seared. Canned beans simmered with onion and spices. Rotisserie chicken pulled onto tortillas with cabbage. These are templates. Cook EZ varies the spice. You keep the muscle memory.
Air fryer: leftover potatoes, a chicken thigh if you have 20 minutes and a thermometer, frozen vegetables oiled and salted. 30-minute dinners and air-fryer guides in this cluster expand the methods. Tonight you need one.
If you have nothing: the store trip for eggs, a bag of frozen vegetables, and a can of beans is still faster than a 12-ingredient generate. Shop that. Generate after you are home if you want a method. "No store trip" only applies when it is true.
Keep a default sauce cup in your head: tamari or labeled GF tamari, vinegar, a pinch of sugar, chili. That cup turns leftover grain into fried rice and leftover chicken into a glaze. Mix it while the pan heats. This is mise en place for people who will not chop seven things.
When to photograph, when to type
Photograph the shelf if you truly do not remember what you bought. Type if you know: "eggs, cabbage, leftover rice, gochujang, 20 minutes." Typing wins on speed. The camera wins on forgotten tofu behind the jam.
A photo of a restaurant dish you had at lunch is a recipe-from-a-photo job for tomorrow, unless you want to cook it tonight and you already have the ingredients. Do not start a birria at 6:45 p.m. because the photo was pretty. Identify, save, cook Saturday.
Share-intent images from a chat: same rule. Confirm the dish name. Generate against tonight's minutes. If the dish is a 3-hour consume, the honest card is a shortcut or a "cook later."
A menu screenshot in your camera roll is a trap at 6:40 p.m. Save it to a note titled Saturday. Tonight wants food that is already in the building. Recipe-from-a-photo is a gift when you have time to shop the gap. It is a punishment when the gap is fish sauce, palm sugar, and three limes.
Cook like you meant it, even in 20 minutes
Heat the pan first. Pat protein dry. Salt. Do not crowd. Get fond. Deglaze. Acid at the end. That is Maillard and a pan sauce, and it is why a Tuesday egg fried rice tastes like food. A generate that steams everything in a covered pan to "save time" saves time and spends flavor. Uncover. Let water leave.
Thermometer on poultry. 165 °F. Carryover on a thin cutlet is small, so do not pull at 140 °F and hope. Leftover reheat 165 °F. The clock is not a pathogen kill.
Mise en place can be three piles: allium, protein, sauce cup. Cook Mode keep-awake so the screen does not die while garlic is in the oil. Garlic burns in seconds. That smell is the night going sideways. Lower the heat. You can still eat.

Allergies still apply when you are tired

Cooking for a mixed table: make the allergen-free pan first, or use two pans. Do not "pick the peanuts off." Tonight is not the night to get clever.
Log after, or you will forget the oil. Barcode the yogurt you ate over the sink (free). Plate photo if the bowl was a mixed leftover pile. The diary's worst night is the night you cooked and logged nothing, then decided the app "does not work."
A second pair of tongs dedicated to cooked food is a weeknight luxury that prevents raw-chicken-to-salad mistakes. If you have one pair, wash it in the soapy bowl before it touches the cabbage. That is the whole protocol. It takes 20 seconds. It is the protocol.
Energy, macros, and the real hunger
If you are ravenous, start a starch that cooks itself (rice cooker, pasta water) before you scroll generates. Hunger makes people order delivery while a card sits uncooked. Put water on. Then open Capture.
TDEE from the calorie calculator is a daily budget, not a per-meal shame score. A 900 kcal Tuesday dinner can still fit if lunch was small. A 900 kcal dinner plus a 900 kcal lunch is a different arithmetic. FoodData Central will not judge. It will add.

If you are using the calorie calculator target tonight, put the oil in a spoon before it hits the pan. Hungry cooks pour. A 15 ml spoon is a decision. A free pour is a diary surprise tomorrow morning.
If you order anyway
That is allowed. Log it. Photograph the plate if you want macros. Chill leftovers within 2 hours. Tomorrow's "what to cook" starts with that container, dated.
Do not generate a complex recipe at 9 p.m. as a punishment. Generate breakfast. Or generate Thursday. The credit is better there.
Reset the kitchen to a cookable state: one clean skillet, salt, oil, eggs in the fridge. Future-you at 6:30 p.m. is a different person with the same stove. Leave them a pan.
Leave the skillet on the stove, wiped, with a note: salt, oil, eggs. Future 6:30 p.m. is a person with low glucose and a phone. They will cook if the pan is empty and the eggs exist. They will order if the pan still has last night's fond welded on.
Name the leftover rice out loud. Put the skillet on. Crack the eggs into a cup. Generate "fried rice, 15 minutes, no peanuts." When the rice crackles, you already know what you are cooking. The phone is just the timer.
