Air-fryer recipes: convection on the counter, with real temperatures

An air fryer is a small convection oven with a basket. It is good at dry heat, Maillard on small pieces, and reheating leftovers to a crisp. It is bad at steaming greens in a pile and at cooking a whole stew. Cook EZ will write air-fryer steps if your Taste Profile lists the appliance. This guide is the physics, the conversion from oven recipes, and the food-safety numbers that do not change because the machine is cute.
Airflow, wattage, and basket truth
Hot air has to touch the food. A single layer of tofu cubes, chicken wings, or broccoli florets browns. A jammed basket steams. Shake or toss once so the undersides see air. If you own a 5.8-quart basket, 2 pounds of wings is two batches. The generate should say so. If it plates six thighs in one layer that cannot exist in your basket, split the batch. Taste Profile equipment should include the size if you care. If you did not list it, put "5.8 qt basket" in the note.
Wattage varies. A 1700 W drawer will run hotter and faster than a 1200 W toaster-oven air fryer. The first time you cook a new protein, check early. A 12-minute card might be done at 9. Carryover cooking still happens on thick pieces after you pull the basket. Rest chicken a few minutes. Confirm 165 °F in the thickest part.
Preheat if your manual says so, especially for wet-battered foods and for pizza-like things that need a hot floor. Many basket models heat so fast that a 2-minute preheat is enough. Do not assume a cold start equals a 400 °F oven preheat of 15 minutes. Use the oven-temperature converter on this site when a European recipe lists gas mark 6 and you think in Fahrenheit. Then decide whether the air fryer wants 25 °F less than the oven version as a starting experiment. That 25 °F rule is a heuristic, not a law. Check early.
Probe through the thickest piece after a 2-minute rest on a plate. Carryover on a stuffed basket is uneven. The piece at the back may be paler. Rotate the basket if your model has a hot spot. Write that hot spot down. The generate will not know your apartment wiring.
What loves the basket
Tofu cubes tossed in a teaspoon of oil and cornstarch. Chicken thighs, skin on, salted. Salmon portions for 7 to 10 minutes at 390 °F, until 145 °F or flaking. Potatoes cut small. Broccoli with oil so it chars instead of drying into dust. Leftover pizza. Leftover fried rice spread thin (stir once). Frozen vegetables that you dry and oil so they roast instead of weeping.
Wet battered foods make a mess and can stick. Light breading (panko, a spray of oil) works. Heavy wet batter belongs in oil. The generator should not promise "beer batter in the air fryer" without a warning about the basket coating.
Cheese melts and drips. Use a liner only if your manual allows it and if air can still move. Foil that blocks the grate turns the machine into a sad oven. Parchment with holes is a compromise. Bare basket, a little oil, and a shake is often cleaner.
Parchment liners that block airflow are why "air-fried" broccoli steams. Cut a hole, or skip the liner. A light coat of oil on the grate and a shake beat a soggy liner most nights.
Doneness and leftovers
USDA Keep Food Safe temperatures still apply. Poultry 165 °F. Ground meats 160 °F. Fish 145 °F. The air fryer's rapid brown can fool you. Color is Maillard, not a pathogen kill. Use a thermometer through the basket slats or pull the piece onto a plate and probe. Do not stab through the nonstick in a way that ruins the coating. Lift the food.
Reheating leftovers: FSIS wants 165 °F. The air fryer is excellent at this for pizza, wings, and roasted vegetables. Spread them out. 320 to 350 °F so the outside does not charcoal before the center is hot. Leftover rice should be steaming hot throughout. Day-old rice carries a Bacillus cereus story if it was cooled badly. Chill rice quickly on night one. Reheat hard on night two.
Do not air-fry sealed wet packets or whole eggs in the shell unless you like cleaning an explosion. The generate should not suggest those. If it does, ignore that step.
Frozen fries have a label with oven instructions. Convert with the 25 °F-lower heuristic, then check at half the bag's oven time. The FDA panel also tells you the oil already in the fry. Log that, plus any spray you add.
Generating an air-fryer recipe in Cook EZ
List the air fryer in equipment. Cap the time. Name whether you have a basket or a toaster-oven tray. "Air-fry 400 °F, 12 minutes, shake at 6, internal 165 °F" is the kind of step Cook Mode can timer. Vague "air fry until done" is a bad step. Edit it.
Oil grams belong on the card. Air fryers need less oil than a deep fryer. They do not need zero oil for most vegetables. A teaspoon to a tablespoon for a basket of broccoli is normal. Log it. FoodData Central roasted vegetables without oil will undercount if you oiled.
Allergies: breading often contains wheat. Soy sauces used as a glaze often contain wheat. AI can miss wheat in sauces. Specify gluten-free panko and labeled tamari if you need them. Verify the packages. Barcode the panko into the diary if you care about the serving.
Converting an oven recipe
Start 25 °F lower and 20 percent less time, then check. A 425 °F oven roast of broccoli for 20 minutes might be 400 °F for 12 to 16 in the basket. Dense foods (whole potatoes) may not save time. Cut them smaller. The unit converter helps with gram weights. The oven-temperature converter helps with gas marks. Neither converts "a crowded tray" into "a single layer." You have to cut the batch.
Sheet-pan recipes with a sauce that should bubble (enchiladas, baked pasta) are poor air-fryer candidates. Dry-heat plus a shallow layer is the sweet spot. Generate "air fryer" rather than converting a lasagna and hoping.
Marinades with a lot of sugar burn at 400 °F. Glaze in the last 2 to 3 minutes. The fond in an air-fryer is on the food, not on a pan you deglaze. Flavor has to be on the surface. Salt early. Sugar late.
Smoke, grease, and the next dinner
Fatty chicken skin will smoke if the drawer is dirty. Empty the fat. Wipe the grate. A smoking air fryer is often yesterday's grease, not a defective recipe. If the generate uses a fatty cut, the last step should be "pour off drippings."
Nonstick scratches from metal tongs are how baskets die. Silicone, wood, or coated tongs. The Cook Journal photo can wait until the food is on a plate.
Do not put the basket in a dishwasher if the manual forbids it. A ruined coating flakes into food. That is not a macro you want to log.
Spread the tofu in one layer. Set Cook Mode to 12 minutes at 390 °F with a shake at 6. When the corners are brown, glaze in a bowl, not in a puddle in the drawer. Probe the chicken on the other night. The basket is a fan. You still own the thermometer.
